Aguavida begins where the road ends — in rows of blue agave under a hard sky. We grow slow, cut by hand, roast low. Nothing hurried, nothing forced. The land sets the pace; we follow it into the bottle.
Single-estate piñas. Brick-oven roast. Copper distillation. A house rule: if a step can be done slower and by hand, it is. That patience is the flavour.
05 — The making · Interactive documentary
Stage 01
Blue Weber agave, grown 7–9 years in the highlands of Jalisco. Sugar-dense, sun-stressed, hand-selected piña by piña.
Stage 02
Jimadores cut each piña by hand — 40kg of fibre and juice. No machines. A blade, a back, generations of knowledge.
Stage 03
Slow-roasted 48 hours in brick ovens. Starch turns to honey. The whole valley smells of caramel and earth.
Stage 04
Twice distilled in copper pot stills. Heads and tails cut hard. Only the corazón — the heart — becomes Aguavida.
Stage 05
Steel for Blanco. Ex-bourbon for Reposado. French oak for Añejo. Time does the talking; we just listen.
Stage 06
Numbered by hand, sealed in small lots. Glass weight chosen to feel like an object, not packaging.
